Chocolate Cookie Recipe

Hi all,

Sorry I have been a little MIA lately. My boyfriend and I recently purchased our first home so every free second has been taken up decorating!

However, I took a break over the bank holiday weekend to whip together some of these delicious chocolate cookies. They are really simple to make and take less than 30 minutes from start to finish!

Ingredients

  • 200g softened unsalted butter
  • 300g soft brown sugar
  • 2 tsp vanilla extract
  • 2 eggs
  • 300g self raising flour
  • 80g cocoa powder
  • 1 tsp baking powder
  • 300g choc chips/M&M’s/nuts of your choice

Method

  • Preheat your oven to 180 degrees Celsius, 160 degrees Celsius for fas assisted ovens or gas mark 4.
  • First you want to cream together your softened butter and sugar until it is light and fluffy.
  • Secondly beat in vanilla extract and eggs until combined.
  • In a separate bowl sift together your flour, cocoa powder and baking powder.
  • Slowly add the flour mix to the creamed mixture in stages to ensure the mixture is fully combined.
  • Once combined fold in your chosen cookie filling – in this case I decided to use a mixture of regular and crispy M&M’s to add different texture to the cookies.
  • On a pre-lined baking tray spoon around a tablespoon of the mixture onto the baking tray and just let it drop off the spoon. TIP Make sure you leave enough space between each tablespoon of mixture as they will spread in the oven! I managed to get around 15 large cookies out of this mixture!
  • Bake in the oven for 12-15 minutes. The cookies will still be slightly soft in the middle.
  • Remove from the oven and place on a cooling rack.

I recommend eating these cookies whilst they are still warm with your choice of ice cream. They also keep well in an air tight container for around a week for a cheeky snack.
