Since moving into our first house in November I was yet to try baking something in the oven! Our kitchen is one of the only rooms in our house that we have not renovated so the oven is pretttyyy old school. I am used to a super quick heating fan assisted oven…whereas the one we have now is your bog basic. I decided to keep it simple for my first bake with a tried and tested Chocolate Chip Cookie recipe.
This recipe give you delicious, chewy cookies…although you can bake for slightly longer if you like them a bit more firm! I put these in our cookie jar at the beginning of this week and it’s safe to say there are not any left! (Please excuse the pictures…the lighting isn’t fab :|)
Ingredients
125
grams of unsalted butter (room temperature)
115 grams of soft brown sugar
110 grams of caster sugar
1 medium egg
1 teaspoon of vanilla extract
220 grams of self raising flour
½ teaspoon salt
200 grams of chocolate chip cookies
Method
1. Preheat your oven to 200 degrees Celsius (180 degrees Celsius fan or gas mark 4.)
2. Line 2 baking trays with baking paper (I didn’t have any so tin foil worked just fine!)
3. In a bowl cream together the butter and sugars until pale and fluffy.
4. Add the egg and vanilla extract to the creamed mixture and mix together.
5. Add the salt and self raising flour, mix thoroughly until your cookie dough forms and then add in your chocolate chips.
6. Break off walnut size pieces of the cookie dough and carefully roll into balls. Place the balls on your baking trays making sure they are distributed out evenly as the dough will spread when baking.
7. Bake into the oven for 8 minutes if you like your cookies soft and chewy, 10 if you prefer them a little more solid.

8. Transfer onto a wire rack to cook down and enjoy!
