I hope you have all been having a lovely week – the weather has been amazing in the UK…if not too hot (dare I say it). I have definitely been missing the office air con this week!
Today I am bringing you one of my current favourite recipes. These blueberry muffins are quick, easy and perfect for breakfast or a mid morning snack.
Ingredients (makes 12 muffins)
- 110 grams of butter
- 250 grams of plain flour
- 250 grams of caster sugar
- 2 eggs
- 125 millilitres of milk
- 2 teaspoons of baking powder
- 1/2 teaspoon of salt
- 225 grams of fresh blueberries
Method
1.Preheat
the oven to 180 degrees Celsius, 160 degrees Celsius fan or Gas Mark

2.Grease and flour a muffin tin or line with muffin cases.
3.Sieve flour, baking powder and the salt together and set aside.
4.In a separate bowl cream together the room temperature butter and sugar until light and fluffy.
5.Add the eggs to the butter and sugar mix and beat together well.
6.Add the milk and flour and beat until the mixture is combined.
7.Stir in the blueberries.
8. Distribute the mixture between the 12 muffins cases, filling until around 2/3 full.
9. Bake for 45 to 30 minutes in them middle of the preheated oven.
10. Remove and leave to cool (they also taste amazing when still slightly warm!
