I don’t know about you but in our household we always seem to buy more bananas than we can eat before they get overripe. Instead of throwing them away I often use this recipe to make sure that nothing goes to waste. It is realllllly simple and makes 12 amazingly tasty muffins!
Ingredients
225g Plain Flour
100g Caster Sugar
1 tbsp Baking Powder
85g Plain Chocolate Chips
1 Egg
4 tbsps Oil (I use either sunflower or vegetable)
4 tbsp Milk
250g Bananas (mashed)

Method
- Preheat your oven to 200 degrees celcius, 180 degrees celcius (fan oven) or gas mark 6.
- Place the flour, caster sugar, baking powder, salt and chocolate chips into a large mixing bowl.
- Mix the ingredients thoroughly and make a well in the centre.
- In a separate mixing bowl beat together the mashed banana, egg, milk and oil.

- Pour the wet ingredients into the well of the dry ingredients and stir together – don’t worry, the batter should be lumpy!
- Fill a lined 12-hole muffin tin so that the cases are around ¾ full and place in the centre of the oven for 20-25 minutes, or until golden brown on top.

- Allow your muffins to cool on a wired rack and voilà!

Tip – These muffins are delicious still slightly warm!
