This cookie always goes down well with adults and kids alike! It doesn’t to long either to whip up if you have guests coming over. I like to warm the cookie up and serve it with ice cream! 🙂

Ingredients
- 125g unsalted butter (softened) plus a little extra for greasing
- 75g soft light brown sugar
- 75g caster sugar
- 1 medium egg
- 1 tsp vanilla extract
- 225g plain flour, plus a little extra for dusting
- ½ tsp baking powder
- 1 tsp bicarbonate of soda
- ½ tsp fine salt
- 100g nuts finely chopped (hazelnut or macadamia work well)
- 125g chocolate roughly chopped (white, milk or dark…whatever takes your fancy!)
- 180g M&M’s or Smarties
Method
- Preheat the oven to 180 degrees Celsius, 160 degrees Celsius for a fan oven or gas mark4.
- Grease a 20cm loose-based cake tin and lightly dust with flour to coat – this will stop the cookie sticking to the tin!
- Beat together the butter and the sugars with an electric whisk until the mixture becomes light and fluffy.,
- Add the egg and the vanilla extract and beat to combine.
- Once this is complete sift in the flour, bicarbonate of soda, baking powder and salt. Fold the mixture until combined.
- Add in ¾’s of the M&M’s/Smarties, nuts and chocolate until evenly distributed.
- Press the mixture into your prepared tin and press the dough down lightly.
- Sprinkle over the remaining nuts, chocolate and M&M’s/Smarties and slightly press into the dough.
- Place into your preheated oven and bake for 25-30 minutes or until golden brown and risen. (TIP – Cover the tin with foil halfway through cooking if the top is browning to quickly to avoid the mixture burning.
- Remove from the oven and place on a wired rack to cool completely before removing from the tin.
- Once cooled remove from the in and cut into wedges.
